Zucchini Fritters Recipe

  • Skillet or frying pan

Ingredients
  

  • 2 medium zucchinis grated
  • 1/2 small onion finely chopped (optional)
  • 1/4 cup all-purpose flour or gluten-free flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Olive oil for frying

Instructions
 

  • Prepare the Zucchini:
  • Grate the zucchinis using a box grater or food processor. Place the grated zucchini in a clean dish towel or paper towels and squeeze out the excess moisture. This is important to get crispy fritters.
  • Mix the Fritter Ingredients:
  • In a large bowl, combine the grated zucchini, chopped onion (if using), flour, Parmesan cheese, egg, garlic powder, oregano, salt, and pepper. Stir until everything is well combined.
  • Fry the Fritters:
  • Heat a tablespoon of olive oil in a large skillet or frying pan over medium heat. Scoop a spoonful of the zucchini mixture and form it into a small patty. Place it in the skillet and flatten slightly with the back of the spoon. Fry the fritters for 3-4 minutes on each side, or until golden and crispy.
  • Drain and Serve:
  • Remove the fritters from the skillet and place them on a plate lined with paper towels to drain any excess oil. Serve immediately, or keep warm in the oven until ready to serve.
