- For the turkey:
- 1 whole turkey about 10-12 lbs
- 1 tablespoon olive oil
- Salt and pepper to taste

- 1 onion quartered
- 2 carrots chopped
- 2 celery stalks chopped
- 4 cups chicken or turkey broth
- For the gravy:
- 1/4 cup all-purpose flour
- 2 cups turkey drippings from roasting the turkey

- For the mashed potatoes:
- 4 pounds russet potatoes peeled and chopped
- 1/2 cup butter
- 1/2 cup milk or more for desired creaminess

Roast the Turkey: Preheat the oven to 350°F (175°C). Rub the turkey with olive oil, then season with salt and pepper. Stuff the cavity with fresh herbs and the quartered onion. Place the turkey in a roasting pan, and surround it with carrots, celery, and broth. Roast the turkey for about 13 minutes per pound, or until the internal temperature reaches 165°F (75°C). Make the Gravy: Once the turkey is cooked, remove it from the roasting pan and set it aside to rest. Pour the drippings from the pan into a saucepan, and skim off excess fat.
