Prepare the Mushrooms
Preheat your oven to 375°F (190°C). Clean the mushrooms and remove the stems, creating small cavities in each mushroom cap for stuffing. Place the mushroom caps in a baking dish and drizzle with olive oil.
Cook the Chicken
Season the chicken breasts with salt, black pepper, and garlic powder. Grill or pan-sear the chicken for 6-8 minutes per side, or until fully cooked. Dice the chicken into small pieces and set aside.
Make the Stuffing
In a bowl, combine the diced chicken, heavy cream, Parmesan cheese, mozzarella cheese, garlic powder, salt, and black pepper. Mix well to create a creamy filling.
Stuff the Mushrooms
Spoon the chicken Alfredo mixture into each mushroom cap, pressing down slightly to make sure they’re well filled.
Bake the Stuffed Mushrooms
Place the stuffed mushrooms in the preheated oven and bake for 20-25 minutes, or until the mushrooms are tender and the filling is bubbly and golden on top.
Prepare the Alfredo Sauce (Optional)
For extra creamy Alfredo flavor, you can drizzle some homemade Alfredo sauce over the top of the stuffed mushrooms. In a small saucepan, melt the butter over medium heat, then add the heavy cream and Parmesan cheese. Stir constantly until the sauce thickens, then season with garlic powder, salt, and black pepper. Drizzle over the baked stuffed mushrooms before serving.
Serve
