Preparing the Steak:
Season the Steaks:
Pat the steaks dry with paper towels.
Season both sides generously with salt and pepper.
Cook the Steaks:
Heat the olive oil in a cast iron skillet or grill pan over medium-high heat.
Add the steaks and cook for about 4-5 minutes on each side, or until they reach your desired level of doneness.
In the last minute of cooking, add the minced garlic and butter to the skillet. Spoon the melted garlic butter over the steaks.
If using, add fresh rosemary or thyme to the skillet for added flavor.
Rest the Steaks:
Remove the steaks from the skillet and let them rest on a cutting board for about 5 minutes before slicing.
Preparing the Garlic Butter Potatoes:
Boil the Potatoes:
In a medium pot, bring salted water to a boil.
Add the halved baby potatoes and cook until they are fork-tender, about 10-12 minutes.
Drain the potatoes and set aside.
Make the Garlic Butter:
In the same pot, melt the butter over medium heat.
Add the minced garlic and cook for about 1-2 minutes until fragrant.
Combine the Potatoes and Garlic Butter:
Add the cooked potatoes back to the pot and toss to coat them in the garlic butter.
Season with salt and pepper to taste.
Garnish:
Transfer the garlic butter potatoes to a serving dish and garnish with freshly chopped parsley.
Serving:
Slice the rested steaks and serve alongside the garlic butter potatoes.
Spoon any remaining garlic butter from the skillet over the steak slices for extra flavor.
