Ingredients
  

  • For the Steak:
  • 2 ribeye or sirloin steaks
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 2 tablespoons unsalted butter
  • Fresh rosemary or thyme optional
  • For the Garlic Butter Potatoes:
  • 1 pound baby potatoes halved
  • 2 tablespoons unsalted butter
  • 2 cloves garlic minced
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Preparing the Steak:
  • Season the Steaks:
  • Pat the steaks dry with paper towels.
  • Season both sides generously with salt and pepper.
  • Cook the Steaks:
  • Heat the olive oil in a cast iron skillet or grill pan over medium-high heat.
  • Add the steaks and cook for about 4-5 minutes on each side, or until they reach your desired level of doneness.
  • In the last minute of cooking, add the minced garlic and butter to the skillet. Spoon the melted garlic butter over the steaks.
  • If using, add fresh rosemary or thyme to the skillet for added flavor.
  • Rest the Steaks:
  • Remove the steaks from the skillet and let them rest on a cutting board for about 5 minutes before slicing.
  • Preparing the Garlic Butter Potatoes:
  • Boil the Potatoes:
  • In a medium pot, bring salted water to a boil.
  • Add the halved baby potatoes and cook until they are fork-tender, about 10-12 minutes.
  • Drain the potatoes and set aside.
  • Make the Garlic Butter:
  • In the same pot, melt the butter over medium heat.
  • Add the minced garlic and cook for about 1-2 minutes until fragrant.
  • Combine the Potatoes and Garlic Butter:
  • Add the cooked potatoes back to the pot and toss to coat them in the garlic butter.
  • Season with salt and pepper to taste.
  • Garnish:
  • Transfer the garlic butter potatoes to a serving dish and garnish with freshly chopped parsley.
  • Serving:
  • Slice the rested steaks and serve alongside the garlic butter potatoes.
  • Spoon any remaining garlic butter from the skillet over the steak slices for extra flavor.
