Shrimp Alfredo Recipe

- For the Shrimp Alfredo:
- 1 lb 450g large shrimp, peeled and deveined
- Salt and black pepper to taste
- 2 tablespoons olive oil or butter
- 3 cloves garlic minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup grated mozzarella cheese optional
- 1/4 teaspoon garlic powder
- 8 oz fettuccine pasta or pasta of choice
- 2 tablespoons chopped fresh parsley optional
Cook the Pasta
Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente (usually about 8-10 minutes). Drain and set aside, reserving a little pasta water.
Cook the Shrimp
While the pasta is cooking, heat olive oil or butter in a large skillet over medium-high heat. Season the shrimp with salt and pepper, then add them to the pan in a single layer. Cook for 2-3 minutes per side, or until they are pink and opaque. Remove the shrimp from the pan and set them aside.
Make the Alfredo Sauce
In the same skillet, reduce the heat to medium. Add the minced garlic and cook for 1-2 minutes, stirring constantly, until fragrant. Pour in the heavy cream and bring it to a simmer. Let it cook for about 3-4 minutes, stirring occasionally. Add the grated Parmesan cheese and garlic powder, stirring until the sauce is smooth and the cheese is melted.
Combine the Pasta and Shrimp
Add the cooked pasta to the Alfredo sauce and toss to coat. If the sauce seems too thick, add a little reserved pasta water to reach your desired consistency. Add the cooked shrimp to the pasta and toss gently to combine.
Serve
Serve the Shrimp Alfredo hot, garnished with fresh parsley and extra Parmesan cheese, if desired.
