Shrimp Alfredo Recipe

  • Large skillet or pan for cooking shrimp and sauce

Ingredients
  

  • For the Shrimp Alfredo:
  • 1 lb 450g large shrimp, peeled and deveined
  • Salt and black pepper to taste
  • 2 tablespoons olive oil or butter
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup grated mozzarella cheese optional
  • 1/4 teaspoon garlic powder
  • 8 oz fettuccine pasta or pasta of choice
  • 2 tablespoons chopped fresh parsley optional

Instructions
 

  • Cook the Pasta
  • Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente (usually about 8-10 minutes). Drain and set aside, reserving a little pasta water.
  • Cook the Shrimp
  • While the pasta is cooking, heat olive oil or butter in a large skillet over medium-high heat. Season the shrimp with salt and pepper, then add them to the pan in a single layer. Cook for 2-3 minutes per side, or until they are pink and opaque. Remove the shrimp from the pan and set them aside.
  • Make the Alfredo Sauce
  • In the same skillet, reduce the heat to medium. Add the minced garlic and cook for 1-2 minutes, stirring constantly, until fragrant. Pour in the heavy cream and bring it to a simmer. Let it cook for about 3-4 minutes, stirring occasionally. Add the grated Parmesan cheese and garlic powder, stirring until the sauce is smooth and the cheese is melted.
  • Combine the Pasta and Shrimp
  • Add the cooked pasta to the Alfredo sauce and toss to coat. If the sauce seems too thick, add a little reserved pasta water to reach your desired consistency. Add the cooked shrimp to the pasta and toss gently to combine.
  • Serve
  • Serve the Shrimp Alfredo hot, garnished with fresh parsley and extra Parmesan cheese, if desired.
