Ingredients
  

  • 4 large potatoes peeled and sliced thinly
  • 1 lb green beans trimmed and cut into 1-inch pieces
  • 6 slices of bacon cooked and crumbled
  • 1 small onion finely chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil for greasing the casserole dish

Instructions
 

  • Cook the Potatoes and Green Beans: Preheat your oven to 375°F (190°C). In a large pot, boil the sliced potatoes for 8-10 minutes until they are just tender (but not fully cooked). In the last 3-4 minutes of boiling, add the green beans to blanch them. Drain and set aside.
  • Prepare the Casserole Base: In a large mixing bowl, combine the cooked potatoes, green beans, crumbled bacon, chopped onion, garlic powder, onion powder, salt, and pepper. Mix well.
  • Make the Creamy Sauce: In a separate bowl, mix the sour cream and mayonnaise until smooth. Stir in half of the shredded cheddar cheese.
  • Assemble the Casserole: Grease a 9x13-inch casserole dish with olive oil. Spread the potato, green bean, and bacon mixture evenly in the dish. Pour the creamy sauce over the top and spread it evenly.
  • Top with Cheese: Sprinkle the remaining cheddar cheese over the casserole.
  • Bake: Cover with aluminum foil and bake for 25 minutes. Then, uncover and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  • Serve: Let the casserole sit for a few minutes before serving. Enjoy this comforting dish as a side or a main!
