- 4 large potatoes peeled and sliced thinly
- 1 lb green beans trimmed and cut into 1-inch pieces
- 6 slices of bacon cooked and crumbled
- 1 small onion finely chopped
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil for greasing the casserole dish
Cook the Potatoes and Green Beans: Preheat your oven to 375°F (190°C). In a large pot, boil the sliced potatoes for 8-10 minutes until they are just tender (but not fully cooked). In the last 3-4 minutes of boiling, add the green beans to blanch them. Drain and set aside.
Prepare the Casserole Base: In a large mixing bowl, combine the cooked potatoes, green beans, crumbled bacon, chopped onion, garlic powder, onion powder, salt, and pepper. Mix well.
Make the Creamy Sauce: In a separate bowl, mix the sour cream and mayonnaise until smooth. Stir in half of the shredded cheddar cheese.
Assemble the Casserole: Grease a 9x13-inch casserole dish with olive oil. Spread the potato, green bean, and bacon mixture evenly in the dish. Pour the creamy sauce over the top and spread it evenly.
Top with Cheese: Sprinkle the remaining cheddar cheese over the casserole.
Bake: Cover with aluminum foil and bake for 25 minutes. Then, uncover and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
Serve: Let the casserole sit for a few minutes before serving. Enjoy this comforting dish as a side or a main!
