Ingredients
  

  • 1 lb fresh green beans trimmed
  • 1 lb baby potatoes halved
  • 6 slices of bacon chopped
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley chopped (optional, for garnish)

Instructions
 

  • Cook the Potatoes:
  • In a large pot, bring salted water to a boil. Add the halved baby potatoes and cook until tender, about 10-12 minutes. Drain and set aside.
  • Cook the Green Beans:
  • In the same pot, bring more salted water to a boil. Add the green beans and cook until just tender, about 5-6 minutes. Drain and set aside.
  • Cook the Bacon:
  • In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and drain on paper towels. Leave about 2 tablespoons of bacon grease in the skillet.
  • Sauté the Onion and Garlic:
  • Add the chopped onion to the skillet and sauté in the bacon grease until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant.
  • Combine Everything:
  • Add the cooked potatoes and green beans to the skillet. Toss to coat with the onion, garlic, and bacon grease. Cook for about 5 minutes, stirring occasionally, until everything is heated through and well combined. Add the crispy bacon back into the skillet and mix well.
  • Season and Serve:
  • Season with salt and pepper to taste. Garnish with chopped fresh parsley if desired. Serve immediately.
