Ingredients
  

  • For the Chicken Bites:
  • 1 pound chicken breasts cut into bite-sized pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • For the Breading:
  • 1 cup all-purpose flour
  • 2 large eggs beaten
  • 1 cup breadcrumbs panko or Italian-style
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning

  • Prepare the Chicken:
  • Season the chicken pieces with salt, pepper, garlic powder, and smoked paprika. Toss to coat evenly.
  • Set Up the Breading Station:
  • Place the flour in one bowl.
  • In a second bowl, beat the eggs.
  • In a third bowl, mix breadcrumbs, Parmesan cheese, and Italian seasoning.
  • Bread the Chicken:
  • Dip each piece of chicken into the flour, shaking off excess.
  • Next, coat the chicken in the beaten eggs.
  • Finally, dredge the chicken in the breadcrumb-Parmesan mixture, pressing gently to adhere.
  • Heat the Oil:
  • Heat about 1 inch of oil in a deep skillet or frying pan over medium heat until it reaches 350°F (175°C).
  • Fry the Chicken Bites:
  • Working in batches, fry the chicken bites for 3-4 minutes per side, or until golden brown and cooked through (internal temperature of 165°F).
  • Remove with a slotted spoon or tongs and drain on paper towels.
