Eggplant Fries Recipe

These Eggplant Fries are a healthy, crunchy alternative to traditional fries, perfect for a snack or as a side dish. Coated in crispy breadcrumbs and baked until golden, they are a tasty and guilt-free way to enjoy eggplant. Pair them with your favorite dipping sauce for a satisfying treat!

Equipment

  • Three shallow bowls (for breading)
  • Knife and cutting board
  • Tongs or spoon for coating

Ingredients
  

  • 2 medium eggplants cut into fries (about 1/4-inch thick)
  • 1 cup breadcrumbs preferably panko for extra crunch
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 2 large eggs beaten
  • Salt and pepper to taste
  • Olive oil spray or a little olive oil for drizzling

Instructions
 

  • Preheat the Oven:
  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly grease with olive oil or spray.
  • Prepare the Eggplant:
  • Cut the eggplants into fries, making sure they are all roughly the same size so they cook evenly.
  • Prepare the Breading Station:
  • In a shallow bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, oregano, salt, and pepper. In another shallow bowl, beat the eggs.
  • Coat the Eggplant Fries:
  • Dip each eggplant fry into the beaten eggs, allowing any excess to drip off, then coat it in the breadcrumb mixture. Press gently to ensure the breadcrumbs stick well. Place each coated fry on the prepared baking sheet.
  • Bake the Fries:
  • Once all the fries are coated, lightly spray or drizzle them with olive oil. Bake in the preheated oven for 20-25 minutes, flipping halfway through, until the fries are golden brown and crispy.
  • Serve:
  • Once done, remove from the oven and season with a little more salt, if desired. Serve the eggplant fries with your favorite dipping sauce, such as marinara, ranch, or tzatziki.
