Preheat Oven:
Preheat your oven to 375°F (190°C).
Prepare the Spinach and Feta Stuffing:
In a mixing bowl, combine the chopped spinach, crumbled feta cheese, cream cheese, minced garlic, lemon juice, and dried dill (if using). Mix until well combined.
Prepare the Salmon Fillets:
Season the salmon fillets with salt and pepper on both sides.
Using a sharp knife, make a horizontal cut along the side of each fillet to create a pocket for the stuffing. Be careful not to cut all the way through the fish.
Stuff the Salmon Fillets:
Spoon the spinach and feta mixture into the pocket of each salmon fillet. Use toothpicks to secure the filling if needed.
Bake the Salmon:
Place the stuffed salmon fillets in a baking dish.
Drizzle the olive oil over the fillets.
Cover the baking dish with aluminum foil (optional, to prevent the fish from drying out).
Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.
Serve:
Remove the toothpicks (if used) and transfer the stuffed salmon to serving plates.
Garnish with lemon wedges and a sprinkle of fresh dill (optional).
