Ingredients
  

  • 4 salmon fillets
  • Salt and pepper to taste
  • 1 cup fresh spinach chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup cream cheese softened
  • 1 garlic clove minced
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon dried dill optional
  • Lemon wedges for garnish

Instructions
 

  • Preheat Oven:
  • Preheat your oven to 375°F (190°C).
  • Prepare the Spinach and Feta Stuffing:
  • In a mixing bowl, combine the chopped spinach, crumbled feta cheese, cream cheese, minced garlic, lemon juice, and dried dill (if using). Mix until well combined.
  • Prepare the Salmon Fillets:
  • Season the salmon fillets with salt and pepper on both sides.
  • Using a sharp knife, make a horizontal cut along the side of each fillet to create a pocket for the stuffing. Be careful not to cut all the way through the fish.
  • Stuff the Salmon Fillets:
  • Spoon the spinach and feta mixture into the pocket of each salmon fillet. Use toothpicks to secure the filling if needed.
  • Bake the Salmon:
  • Place the stuffed salmon fillets in a baking dish.
  • Drizzle the olive oil over the fillets.
  • Cover the baking dish with aluminum foil (optional, to prevent the fish from drying out).
  • Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.
  • Serve:
  • Remove the toothpicks (if used) and transfer the stuffed salmon to serving plates.
  • Garnish with lemon wedges and a sprinkle of fresh dill (optional).
