Ingredients
  

  • 4 catfish fillets
  • Salt and pepper to taste
  • 1 cup steamed broccoli chopped
  • 1 cup shredded cheddar cheese
  • 1/4 cup cream cheese softened
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 cup all-purpose flour
  • 2 eggs beaten
  • 1 cup breadcrumbs
  • Vegetable oil for frying

  • Prepare the Broccoli and Cheese Stuffing:
  • In a mixing bowl, combine the steamed and chopped broccoli, shredded cheddar cheese, cream cheese, garlic powder, and onion powder. Mix well until the ingredients are thoroughly combined.
  • Stuff the Catfish Fillets:
  • Season the catfish fillets with salt and pepper on both sides.
  • Spoon the broccoli and cheese mixture onto one half of each fillet.
  • Fold the other half of the fillet over the stuffing and secure with toothpicks to keep the stuffing inside.
  • Coat the Stuffed Catfish:
  • Place the flour, beaten eggs, and breadcrumbs in three separate shallow bowls.
  • Dredge each stuffed catfish fillet in the flour, shaking off any excess.
  • Dip the fillets into the beaten eggs, ensuring they are well-coated.
  • Finally, coat the fillets in the breadcrumbs, pressing gently to adhere.
  • Fry the Catfish:
  • Heat vegetable oil in a large skillet or deep fryer to 350°F (175°C).
  • Carefully place the stuffed catfish fillets into the hot oil.
  • Fry for 4-5 minutes per side, or until the fillets are golden brown and cooked through.
  • Remove from the oil and place on paper towels to drain any excess oil.
  • Serve:
  • Remove the toothpicks from the stuffed catfish fillets.
  • Serve immediately, garnished with fresh herbs if desired.
