Ingredients
  

  • 4 cups kale washed and chopped into bite-sized pieces (stems removed)
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon lemon zest
  • 1 teaspoon honey or maple syrup optional for sweetness
  • Salt and pepper to taste
  • Optional toppings: nuts e.g., walnuts, almonds, seeds, or dried cranberries

Instructions
 

  • Prepare the Kale
  • Wash the kale thoroughly and remove the tough stems. Chop the kale into bite-sized pieces and place it into a large salad bowl.
  • Make the Dressing
  • In a small bowl, whisk together the olive oil, lemon juice, lemon zest, and honey (if using). Season with salt and pepper to taste. Whisk until the dressing is smooth and well combined.
  • Massage the Kale
  • Pour the dressing over the kale and use your hands to massage it into the leaves. This will help soften the kale and make it more tender. Massage the kale for 1-2 minutes until it begins to wilt slightly.
  • Add the Parmesan
  • Sprinkle the grated Parmesan cheese over the massaged kale and toss the salad to evenly distribute the cheese.
