Ingredients
  

  • For the Fried Chicken Bites:
  • 1 lb chicken breast cut into bite-sized pieces
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 egg beaten
  • 1 cup breadcrumbs
  • Vegetable oil for frying
  • For the Mac & Cheese:
  • 8 oz elbow macaroni
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 2 tablespoons butter
  • 1 tablespoon flour
  • Salt and pepper to taste
  • 1/2 teaspoon mustard powder optional

Instructions
 

  • Make the Mac & Cheese: Cook the elbow macaroni according to the package instructions. Drain and set aside.
  • In a saucepan, melt butter over medium heat. Add flour and whisk for 1-2 minutes to form a roux.
  • Gradually add milk while whisking to avoid lumps. Cook until the sauce thickens.
  • Stir in the cheddar cheese until melted and smooth. Season with salt, pepper, and mustard powder (if using). Add the cooked macaroni and mix well. Set aside.
  • Prepare the Fried Chicken Bites: In a shallow bowl, combine flour, garlic powder, paprika, salt, and pepper.
  • Dip each chicken piece into the beaten egg, then coat in the flour mixture, ensuring it’s well-coated.
  • Heat vegetable oil in a deep fryer or large pot to 350°F. Fry the chicken bites in batches until golden brown and cooked through (about 5-7 minutes). Drain on a paper towel-lined plate.
  • Serve the fried chicken bites alongside the creamy mac & cheese.
