Easy Fluffy Churro Bits with Chocolate Sauce

Ingredients
  

  • For the Churro Bits:
  • 1 cup all-purpose flour
  • 1/2 cup water
  • 1/4 cup unsalted butter
  • 1 tablespoon sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Oil for frying
  • Cinnamon sugar 1/4 cup sugar mixed with 1 teaspoon cinnamon for coating
  • For the Chocolate Sauce:
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract

Instructions
 

  • Churro Bites:
  • In a saucepan, bring water, butter, sugar, and salt to a boil.
  • Reduce heat to low and add flour, stirring constantly until a dough forms and pulls away from the sides.
  • Remove from heat and let cool for 5 minutes.
  • Add vanilla extract and eggs, one at a time, mixing well after each addition until smooth.
  • Transfer dough to a piping bag fitted with a star tip.
  • Heat oil in a frying pan over medium-high heat.
  • Pipe 1-inch lengths of dough into the hot oil, cutting off with scissors.
  • Fry until golden brown, about 2-3 minutes per side. Remove with tongs and drain on paper towels.
  • Cinnamon Sugar Coating:
  • In a small bowl, mix sugar and cinnamon.
  • Roll warm churro bites in the mixture until well coated.
  • Chocolate Sauce:
  • In a saucepan, heat heavy cream until just boiling.
  • Remove from heat and add chocolate chips, stirring until smooth and melted.
