Ingredients
  

  • 2 medium zucchinis sliced into 1/4-inch thick strips
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano or Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg beaten

Instructions
 

  • Preheat the Oven
  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or aluminum foil for easy cleanup.
  • Prepare the Zucchini
  • Slice the zucchinis into thin strips (about 1/4 inch wide). Pat them dry with a paper towel to remove any excess moisture. This helps the coating stick and ensures a crispier texture.
  • Make the Breading
  • In a shallow bowl, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, oregano, salt, and pepper. Stir until the mixture is evenly combined.
  • Coat the Zucchini Fries
  • Dip each zucchini strip into the beaten egg, making sure it’s well coated. Then, roll the zucchini strip in the breadcrumb mixture, pressing gently to ensure an even coating. Arrange the coated zucchini fries on the prepared baking sheet in a single layer, making sure they don’t overlap.
