Ingredients
  

  • 4 medium potatoes peeled and diced into small cubes
  • 1 lb 450g breakfast sausages, sliced into bite-sized pieces
  • 1 medium onion finely chopped
  • 1 red bell pepper diced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Prepare the Potatoes:
  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the diced potatoes and season with salt, pepper, garlic powder, and smoked paprika. Cook, stirring occasionally, until the potatoes are golden and crispy, about 15-20 minutes. Remove from the skillet and set aside.
  • Cook the Sausages:
  • In the same skillet, add the remaining tablespoon of olive oil. Add the sliced sausages and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
  • Sauté the Vegetables:
  • In the same skillet, add the chopped onion and red bell pepper. Cook until the vegetables are tender and slightly caramelized, about 5 minutes.
  • Combine and Serve:
  • Add the crispy potatoes and cooked sausages back into the skillet with the sautéed vegetables. Toss everything together until well combined and heated through. Adjust seasoning with salt and pepper if needed.
  • Garnish and Serve:
  • Garnish with freshly chopped parsley and serve hot.
