Ingredients
  

  • For the Pasta:
  • 300 grams 10 oz penne or fettuccine pasta
  • 2 tablespoons olive oil
  • 2 boneless skinless chicken breasts, cut into strips
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • For the White Sauce:
  • 2 tablespoons unsalted butter
  • 3 cloves garlic minced
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk or half-and-half for extra creaminess
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon nutmeg optional
  • Salt and pepper to taste
  • Optional Add-Ins:
  • 1 cup baby spinach
  • 1/2 cup sliced mushrooms

Instructions
 

  • Step 1: Cook the Pasta
  • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente.
  • Drain the pasta and set aside, reserving 1/2 cup of pasta water.
  • Step 2: Cook the Chicken
  • Heat olive oil in a skillet over medium heat. Season the chicken strips with garlic powder, paprika, salt, and pepper.
  • Add the chicken to the skillet and cook for 5-7 minutes, or until golden brown and fully cooked. Remove the chicken from the skillet and set aside.
  • Step 3: Prepare the White Sauce
  • In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  • Sprinkle the flour into the skillet and whisk continuously for 1-2 minutes to form a roux.
  • Gradually pour in the milk while whisking to avoid lumps. Cook the sauce for 3-4 minutes, or until it thickens.
  • Stir in the Parmesan cheese, nutmeg (if using), salt, and pepper. Mix until the cheese is fully melted and the sauce is smooth.
  • Step 4: Combine the Pasta and Sauce
  • Add the cooked pasta and chicken to the skillet with the sauce. Toss to coat the pasta and chicken evenly.
  • If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.
  • Step 5: Serve
  • Garnish with extra Parmesan cheese and freshly chopped parsley, if desired.
  • Serve immediately and enjoy!
