Ingredients
  

  • 2 pounds Yukon Gold or red potatoes
  • 3 large hard-boiled eggs chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons yellow mustard
  • 1/4 cup dill pickle relish
  • 1/2 cup celery finely chopped
  • 1/4 cup red onion finely chopped
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Optional garnish: chopped parsley or green onions

Instructions
 

  • Cook the Potatoes:
  • Wash the potatoes and cut them into bite-sized chunks (peeling is optional). Boil the potatoes in salted water until fork-tender, about 10-12 minutes. Drain and let cool slightly.
  • Prepare the Dressing:
  • In a mixing bowl, whisk together the mayonnaise, mustard, pickle relish, paprika, salt, and pepper until smooth and well combined.
  • Assemble the Salad:
  • In a large bowl, combine the cooked potatoes, chopped hard-boiled eggs, celery, and red onion. Pour the dressing over the mixture and gently toss until everything is evenly coated.
  • Chill:
  • Cover the potato salad and refrigerate for at least 1 hour to allow the flavors to meld together.
  • Serve:
  • Before serving, give the salad a quick stir and garnish with parsley or green onions if desired. Enjoy chilled or at room temperature!
