Corned Beef Hash Recipe
This Corned Beef Hash is a comforting, hearty dish perfect for breakfast, brunch, or even dinner. With crispy potatoes, savory corned beef, and caramelized onions, this meal is a flavorful and satisfying way to use up leftovers or create something new.
- 2 cups cooked corned beef diced or shredded
- 3 cups potatoes peeled and diced (use cooked or raw)
- 1 medium onion diced
- 2 tablespoons unsalted butter or oil
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika optional
- Salt and pepper to taste
- Fresh parsley chopped (optional, for garnish)
- Eggs optional, for serving
Prepare the Ingredients:
Dice or shred the cooked corned beef and peel and dice the potatoes. If using raw potatoes, parboil them for 5 minutes to speed up the cooking process.
Heat the Skillet:
In a large skillet, melt the butter over medium heat. Add the diced onions and sauté for 2-3 minutes until they begin to soften.
Cook the Potatoes:
Add the potatoes to the skillet and season with garlic powder, smoked paprika, salt, and pepper. Cook for 10-15 minutes, stirring occasionally, until the potatoes are golden and crispy on the outside and tender on the inside.
Add the Corned Beef:
Stir in the diced or shredded corned beef and cook for another 5-7 minutes, allowing the meat to heat through and develop a slight crisp.
Optional Topping:
If desired, fry eggs in a separate pan while the hash finishes cooking.
Serve:
Plate the corned beef hash and garnish with fresh parsley. Top with fried eggs, if using, and serve immediately.
