Corned Beef Hash Recipe

Ingredients
  

  • 2 cups cooked corned beef diced or shredded
  • 3 cups potatoes peeled and diced (use cooked or raw)
  • 1 medium onion diced
  • 2 tablespoons unsalted butter or oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika optional
  • Salt and pepper to taste
  • Fresh parsley chopped (optional, for garnish)
  • Eggs optional, for serving

Instructions
 

  • Prepare the Ingredients:
  • Dice or shred the cooked corned beef and peel and dice the potatoes. If using raw potatoes, parboil them for 5 minutes to speed up the cooking process.
  • Heat the Skillet:
  • In a large skillet, melt the butter over medium heat. Add the diced onions and sauté for 2-3 minutes until they begin to soften.
  • Cook the Potatoes:
  • Add the potatoes to the skillet and season with garlic powder, smoked paprika, salt, and pepper. Cook for 10-15 minutes, stirring occasionally, until the potatoes are golden and crispy on the outside and tender on the inside.
  • Add the Corned Beef:
  • Stir in the diced or shredded corned beef and cook for another 5-7 minutes, allowing the meat to heat through and develop a slight crisp.
  • Optional Topping:
  • If desired, fry eggs in a separate pan while the hash finishes cooking.
  • Serve:
  • Plate the corned beef hash and garnish with fresh parsley. Top with fried eggs, if using, and serve immediately.
