Chili Lime Grilled Shrimp Skewers with Chili Lime Sauce Drizzle

Equipment

Ingredients
  

  • For the Shrimp Skewers:
  • 1 lb large shrimp peeled and deveined
  • 2 tablespoons olive oil
  • Zest and juice of 2 limes
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper optional for extra heat
  • Salt and pepper to taste
  • For the Chili Lime Sauce:
  • 3 tablespoons honey
  • 2 tablespoons lime juice
  • 1 tablespoon soy sauce
  • 1 teaspoon chili paste like sambal oelek or hot sauce
  • 1 clove garlic minced
  • 1 tablespoon butter

Instructions
 

  • Prepare the Shrimp:
  • In a large mixing bowl, whisk together olive oil, lime zest, lime juice, chili powder, paprika, garlic powder, cumin, cayenne pepper, salt, and pepper.
  • Add the shrimp to the bowl and toss to coat evenly. Let the shrimp marinate for 15-30 minutes.
  • Prepare the Sauce:
  • In a small saucepan, combine honey, lime juice, soy sauce, chili paste, and minced garlic.
  • Bring to a simmer over medium heat and cook for 2-3 minutes.
  • Stir in the butter until melted and smooth. Remove from heat and set aside.
  • Assemble the Skewers:
  • Thread the marinated shrimp onto skewers, about 4-5 shrimp per skewer.
  • Grill the Skewers:
  • Preheat your grill or grill pan to medium-high heat.
  • Grill the shrimp skewers for 2-3 minutes per side, until shrimp are opaque and cooked through.
  • Drizzle with Sauce:
  • Once grilled, place the skewers on a serving plate.
  • Drizzle the chili lime sauce over the shrimp using a basting brush or spoon.
