Chicken Skewers with Mango Salsa is a vibrant and flavorful dish that combines perfectly seasoned, grilled chicken with a refreshing, sweet, and tangy mango salsa. Ingredients
  

  • For the Chicken Skewers:
  • 2 lbs chicken breasts or thighs cut into bite-sized cubes
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • For the Mango Salsa:
  • 2 ripe mangoes peeled, pitted, and diced
  • 1 small red onion finely chopped
  • 1 red bell pepper diced
  • 1 small jalapeño finely chopped (optional for heat)
  • 2 tablespoons fresh cilantro chopped
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions
 

  • Prepare the Chicken Skewers:
  • In a mixing bowl, combine the olive oil, lime juice, garlic powder, onion powder, cumin, smoked paprika, salt, and pepper.
  • Add the chicken cubes to the marinade, stirring to coat evenly. Cover and refrigerate for at least 30 minutes (or up to 2 hours) to marinate.
  • Make the Mango Salsa:
  • While the chicken is marinating, prepare the mango salsa.
  • In a medium mixing bowl, combine the diced mango, red onion, red bell pepper, jalapeño, cilantro, and lime juice.
  • Season with salt and pepper to taste, then gently stir to combine. Set aside for the flavors to meld.
  • Assemble and Grill the Chicken Skewers:
  • Preheat your grill or grill pan over medium-high heat.
  • Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece for even cooking.
  • Grill the chicken skewers for about 6-8 minutes per side, or until the chicken is fully cooked and has an internal temperature of 165°F (74°C). Use tongs to flip the skewers halfway through grilling.
  • Serve and Enjoy:
  • Once the chicken is cooked, remove it from the grill and let it rest for a few minutes.
  • Serve the chicken skewers with the fresh mango salsa on top or on the side. Enjoy with a side of rice, a salad, or as a light appetizer!
