Step 1: Marinate the Chicken
In a mixing bowl, combine the olive oil, lime juice, minced garlic, chili powder, paprika, ground cumin, onion powder, garlic powder, dried oregano, salt, and black pepper. Mix well to form a marinade.
Add the chicken strips to the bowl and toss to coat them evenly with the marinade. Let the chicken marinate for at least 15-30 minutes.
Step 2: Cook the Chicken
Heat a large skillet or frying pan over medium-high heat.
Add the marinated chicken strips to the skillet and cook until they are browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
Step 3: Sauté the Vegetables
In the same skillet, add a little more olive oil if needed. Add the sliced bell peppers and onion to the skillet.
Sauté the vegetables over medium-high heat until they are tender-crisp and slightly charred, about 5-7 minutes.
Step 4: Combine and Cook
Return the cooked chicken to the skillet with the sautéed vegetables.
Stir everything together and cook for another 2-3 minutes until everything is heated through and well combined.
Step 5: Serve and Store
Divide the Chicken Fajitas into meal prep containers.
Let the fajitas cool before sealing the containers. Store in the refrigerator for up to 4 days.
