Ingredients
  

  • For the Chicken Fajitas:
  • 1 pound chicken breast cut into thin strips
  • 3 bell peppers red, yellow, green, sliced
  • 1 large onion sliced
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • Juice of 1 lime
  • 1 tablespoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • Step 1: Marinate the Chicken
  • In a mixing bowl, combine the olive oil, lime juice, minced garlic, chili powder, paprika, ground cumin, onion powder, garlic powder, dried oregano, salt, and black pepper. Mix well to form a marinade.
  • Add the chicken strips to the bowl and toss to coat them evenly with the marinade. Let the chicken marinate for at least 15-30 minutes.
  • Step 2: Cook the Chicken
  • Heat a large skillet or frying pan over medium-high heat.
  • Add the marinated chicken strips to the skillet and cook until they are browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  • Step 3: Sauté the Vegetables
  • In the same skillet, add a little more olive oil if needed. Add the sliced bell peppers and onion to the skillet.
  • Sauté the vegetables over medium-high heat until they are tender-crisp and slightly charred, about 5-7 minutes.
  • Step 4: Combine and Cook
  • Return the cooked chicken to the skillet with the sautéed vegetables.
  • Stir everything together and cook for another 2-3 minutes until everything is heated through and well combined.
  • Step 5: Serve and Store
  • Divide the Chicken Fajitas into meal prep containers.
  • Let the fajitas cool before sealing the containers. Store in the refrigerator for up to 4 days.
