Ingredients
  

  • For the Cajun Shrimp:
  • 1 lb large shrimp peeled and deveined
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • For the Rice:
  • 1 cup white rice
  • 2 cups water
  • Pinch of salt
  • For the Avocado Dressing:
  • 1 ripe avocado peeled and pitted
  • 1/2 cup plain Greek yogurt
  • 1/4 cup fresh cilantro
  • 2 tablespoons lime juice
  • 1 garlic clove
  • Salt and pepper to taste
  • 2-3 tablespoons water to adjust consistency
  • For the Bowl:
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 red onion thinly sliced
  • Fresh cilantro for garnish

Instructions
 

  • Cook the Rice:
  • In a medium pot, bring 2 cups of water to a boil. Add the rice and a pinch of salt. Reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the water is absorbed. Fluff with a fork and set aside.
  • Prepare the Cajun Shrimp:
  • In a mixing bowl, toss the shrimp with the Cajun seasoning until well coated.
  • Heat the olive oil in a large skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes per side, or until the shrimp are pink and opaque. Remove from the skillet and set aside.
  • Make the Avocado Dressing:
  • In a blender or food processor, combine the avocado, Greek yogurt, cilantro, lime juice, garlic, salt, and pepper. Blend until smooth. Add water, one tablespoon at a time, until the dressing reaches your desired consistency.
  • Assemble the Bowls:
  • Divide the cooked rice between bowls. Top with the Cajun shrimp, cherry tomatoes, cucumber, and red onion.
  • Drizzle the avocado dressing over the bowls. Garnish with fresh cilantro.
