Cook the Rice:
In a medium pot, bring 2 cups of water to a boil. Add the rice and a pinch of salt. Reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the water is absorbed. Fluff with a fork and set aside.
Prepare the Cajun Shrimp:
In a mixing bowl, toss the shrimp with the Cajun seasoning until well coated.
Heat the olive oil in a large skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes per side, or until the shrimp are pink and opaque. Remove from the skillet and set aside.

In a blender or food processor, combine the avocado, Greek yogurt, cilantro, lime juice, garlic, salt, and pepper. Blend until smooth. Add water, one tablespoon at a time, until the dressing reaches your desired consistency.
Assemble the Bowls:
Divide the cooked rice between bowls. Top with the Cajun shrimp, cherry tomatoes, cucumber, and red onion.
Drizzle the avocado dressing over the bowls. Garnish with fresh cilantro.
