Cajun Sausage Pasta Recipe
Cajun sausage pasta is a bold and flavorful dish packed with spicy, smoky, and creamy goodness. This one-pot wonder combines tender pasta, savory sausage, and a creamy Cajun-spiced sauce that coats every bite. With minimal prep and simple ingredients, it’s perfect for busy weeknights or a comforting weekend meal.

- 12 oz pasta penne or rigatoni work best
- 1 tablespoon olive oil
- 12 oz smoked sausage andouille or kielbasa, sliced
- 1 small onion diced
- 1 bell pepper diced (red, green, or yellow)
- 3 garlic cloves minced
- 2 teaspoons Cajun seasoning or adjust to taste
- 1/2 teaspoon paprika
- 1/4 teaspoon red pepper flakes optional for extra heat
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Chopped parsley for garnish
Cook the Pasta
Bring a large pot of salted water to a boil and cook the pasta according to the package instructions. Drain and set aside.
Sauté the Sausage and Vegetables
Heat olive oil in a large skillet over medium-high heat. Add the sliced sausage and cook until browned, about 3-4 minutes. Remove the sausage from the skillet and set aside.
In the same skillet, add the diced onion and bell pepper. Sauté for 2-3 minutes until softened, then add the minced garlic and cook for another minute.
Make the Sauce
Stir in the Cajun seasoning, paprika, and red pepper flakes (if using). Cook for 30 seconds to release the flavors.
Reduce the heat to medium and pour in the heavy cream and chicken broth. Stir well and let it simmer for 3-4 minutes until slightly thickened.
Combine and Serve
Return the cooked sausage to the skillet and stir in the Parmesan cheese until melted and combined. Add the cooked pasta and toss to coat in the sauce. Season with salt and pepper to taste.
Garnish with chopped parsley and serve immediately.
