Ingredients
  

  • 1 lb boneless skinless chicken breasts
  • 1 cup buffalo sauce adjust to taste
  • 4 slices of your favorite cheese cheddar or pepper jack work great
  • 4 sandwich rolls or buns
  • 1 tablespoon olive oil
  • Optional toppings: sliced green onions blue cheese dressing, lettuce

Instructions
 

  • Cook the Chicken: Place the chicken breasts in a slow cooker or Instant Pot. Pour the buffalo sauce over the chicken, ensuring it’s well coated.
  • Slow Cook: If using a slow cooker, cook on low for 6-8 hours or high for 3-4 hours. If using an Instant Pot, cook on high pressure for 15 minutes and allow natural release.
  • Shred the Chicken: Once cooked, remove the chicken from the cooker and shred it with two forks. Return the shredded chicken to the buffalo sauce in the cooker and stir to combine.
  • Prepare the Sandwiches: Preheat your oven to 350°F (175°C). Place the sandwich rolls on a baking sheet. Spoon the buffalo chicken mixture onto the bottom half of each roll, and top with a slice of cheese.
  • Melt the Cheese: Place the baking sheet in the oven and bake for 5-7 minutes or until the cheese is melted and bubbly.
  • Assemble: Remove from the oven, add any optional toppings, and place the top half of the rolls on each sandwich.
