This Breakfast Casserole is the ultimate make-ahead dish, perfect for busy mornings, brunch gatherings, or weekend family breakfasts. Packed with savory sausage, eggs, cheese, and fluffy bread, it’s a hearty, flavorful dish that will satisfy everyone at the table.

Ingredients
  

  • 1 pound breakfast sausage or bacon/ham, diced
  • 8 large eggs
  • 2 cups milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups cubed bread French bread, sourdough, or sandwich bread
  • 1 cup shredded cheddar cheese or any cheese of choice
  • 1/2 cup diced bell peppers optional
  • 1/4 cup chopped green onions optional

Instructions
 

  • Preheat the Oven:
  • Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  • Cook the Sausage:
  • In a skillet over medium heat, cook the sausage until browned and fully cooked. Drain any excess grease and set aside.
  • Whisk the Eggs:
  • In a large mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until well combined.
  • Assemble the Casserole:
  • Layer the cubed bread evenly in the prepared baking dish. Sprinkle the cooked sausage, diced bell peppers (if using), and half of the shredded cheese over the bread. Pour the egg mixture evenly over the top, ensuring all the bread is soaked. Finish by sprinkling the remaining cheese and green onions (if using).
  • Bake:
  • Cover the casserole with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes or until the top is golden brown and the eggs are set.
  • Serve:
  • Let the casserole cool for 5-10 minutes before slicing into squares. Serve warm and enjoy!
