Ingredients
  

  • For the Tuna Poke:
  • 1 lb sushi-grade tuna cut into small cubes
  • 2 tablespoons soy sauce or tamari for gluten-free
  • 1 tablespoon sesame oil
  • 1 teaspoon rice vinegar
  • 1 teaspoon honey or agave syrup
  • 1/2 teaspoon freshly grated ginger
  • 1 teaspoon sesame seeds optional
  • 1 small cucumber thinly sliced
  • 1/4 cup edamame shelled, optional
  • 1/4 cup shredded carrots optional
  • 1/2 avocado sliced
  • 1/4 cup pickled ginger optional
  • Seaweed salad optional
  • For the Rice:
  • 2 cups sushi rice or short-grain rice
  • 2 1/2 cups water
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • For Garnishing:
  • Sliced green onions
  • Sriracha sauce or spicy mayo optional
  • Sesame seeds optional

Instructions
 

  • Cook the Rice:
  • Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to the package instructions or in a rice cooker. Once cooked, transfer the rice to a bowl and gently stir in the rice vinegar, sugar, and salt. Let it cool slightly.
  • Prepare the Tuna:
  • Cut the sushi-grade tuna into small cubes. In a mixing bowl, combine the tuna with soy sauce, sesame oil, rice vinegar, honey (or agave), freshly grated ginger, and sesame seeds (if using). Stir gently to coat the tuna in the marinade. Let it sit for 10–15 minutes to allow the flavors to meld.
  • Assemble the Bowl:
  • In a serving bowl, start by adding a base of rice. Layer the marinated tuna on top of the rice, followed by the cucumber slices, edamame, shredded carrots, and avocado slices. Add a dollop of pickled ginger and seaweed salad for extra flavor, if desired.
  • Garnish and Serve:
  • Top the bowl with sliced green onions, sesame seeds, and a drizzle of spicy mayo or sriracha sauce for a little heat. Serve immediately and enjoy!
