Ingredients

  • 1 pound pork belly cut into cubes or strips
  • Salt and pepper to taste
  • 1 tablespoon olive oil for frying
  • For the Spicy Sauce:
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha sauce
  • 1 tablespoon honey
  • 1 teaspoon rice vinegar
  • 1 teaspoon garlic minced
  • 1/2 teaspoon sesame oil
  • Pinch of red pepper flakes optional, for extra heat
  • For the Rice:
  • 1 cup white rice
  • 2 cups water
  • Pinch of salt

Instructions
 

  • Cook the Rice: Start by cooking the white rice according to the package instructions. Typically, rinse the rice under cold water, then combine with water and a pinch of salt. Bring to a boil, then reduce to a simmer, cover, and cook for 15-20 minutes, until the rice is tender and the water is absorbed.
  • Cook the Pork Belly: While the rice is cooking, heat the olive oil in a skillet over medium-high heat. Season the pork belly cubes with salt and pepper. Add the pork belly to the hot skillet and cook, turning occasionally, until the pieces are golden and crispy on all sides, about 8-10 minutes. Be sure the pork belly is cooked through and crispy on the outside.
  • Make the Spicy Sauce: In a small bowl, combine the soy sauce, sriracha, honey, rice vinegar, garlic, sesame oil, and red pepper flakes (if using). Whisk everything together until well mixed.
  • Assemble the Dish: Once the rice is done and the pork belly is crispy, serve the rice on a plate. Top with the cooked pork belly and drizzle the spicy sauce over the top. You can garnish with sliced green onions or sesame seeds if desired.
