Activate the Yeast
In a small bowl, combine warm water and sugar. Stir until the sugar dissolves. Sprinkle the yeast over the water and let it sit for 5-10 minutes until it becomes frothy and bubbly.
Prepare the Dough
In a large mixing bowl, combine the flour and salt. Once the yeast mixture is ready, add it to the flour mixture along with the olive oil. Mix until a dough forms.
Knead the dough for about 5 minutes until it’s smooth and elastic. If the dough is too sticky, add a little more flour, a tablespoon at a time. If it’s too dry, add a little more water.
Let the Dough Rise
Lightly oil the mixing bowl, place the dough inside, and cover it with a clean kitchen towel. Allow the dough to rise in a warm place for about 1-1.5 hours, or until it has doubled in size.
Shape the Breadsticks
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
Once the dough has risen, punch it down to release any air bubbles. Turn the dough out onto a lightly floured surface and roll it into a rectangle (about 12x8 inches).
Using a sharp knife or pizza cutter, cut the dough into strips (about 1 inch wide) to form the breadsticks.
Bake the Breadsticks
Arrange the breadsticks on the prepared baking sheet, leaving some space between them. Bake in the preheated oven for 12-15 minutes, or until they are golden brown and cooked through.

While the breadsticks are baking, melt the butter in a small saucepan over low heat. Add the minced garlic and cook for 1-2 minutes, until fragrant. Remove from heat and stir in the Parmesan cheese and dried oregano.
Finish the Breadsticks
When the breadsticks are done baking, remove them from the oven and immediately brush them with the garlic Parmesan butter. Sprinkle a little extra Parmesan cheese on top, if desired.
Garnish with fresh parsley for an extra touch of color and flavor.
