Ingredients
  

  • 8 oz bow tie pasta farfalle
  • 2 tbsp olive oil

  • 3 cloves garlic minced
  • 10 oz mushrooms sliced
  • 4 cups fresh spinach roughly chopped
  • 1 cup heavy cream
  • 1 cup vegetable broth
  • 1/2 cup grated Parmesan cheese

  • 1/4 tsp nutmeg optional

Instructions
 

  • Cook the Pasta:
  • Bring a large pot of salted water to a boil. Add the bow tie pasta and cook according to package instructions until al dente. Drain and set aside.
  • Prepare the Sauce:
  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes.
  • Add the minced garlic and sliced mushrooms to the skillet. Cook until the mushrooms are tender and have released their moisture, about 7-8 minutes.
  • Add the Spinach:
  • Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes.
  • Make the Creamy Sauce:
  • Pour in the heavy cream and vegetable broth. Stir to combine and bring to a gentle simmer. Cook until the sauce has slightly thickened, about 5 minutes.
  • Stir in the grated Parmesan cheese, and season with salt, pepper, and nutmeg (if using). Continue to cook until the cheese is melted and the sauce is creamy.
  • Combine Pasta and Sauce:
  • Add the cooked pasta to the skillet and toss to coat the pasta evenly with the sauce. Cook for an additional 2-3 minutes to heat everything through.
  • Serve:
  • Divide the pasta among serving plates and garnish with chopped fresh parsley. Serve immediately.
