- 8 oz bow tie pasta farfalle
- 2 tbsp olive oil
- 1 medium onion finely chopped
- 3 cloves garlic minced
- 10 oz mushrooms sliced
- 4 cups fresh spinach roughly chopped
- 1 cup heavy cream
- 1 cup vegetable broth
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- 1/4 tsp nutmeg optional
- Fresh parsley chopped (for garnish)
Cook the Pasta:
Bring a large pot of salted water to a boil. Add the bow tie pasta and cook according to package instructions until al dente. Drain and set aside.
Prepare the Sauce:
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes.
Add the minced garlic and sliced mushrooms to the skillet. Cook until the mushrooms are tender and have released their moisture, about 7-8 minutes.
Add the Spinach:
Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes.
Make the Creamy Sauce:
Pour in the heavy cream and vegetable broth. Stir to combine and bring to a gentle simmer. Cook until the sauce has slightly thickened, about 5 minutes.
Stir in the grated Parmesan cheese, and season with salt, pepper, and nutmeg (if using). Continue to cook until the cheese is melted and the sauce is creamy.
Combine Pasta and Sauce:
Add the cooked pasta to the skillet and toss to coat the pasta evenly with the sauce. Cook for an additional 2-3 minutes to heat everything through.
Serve:
Divide the pasta among serving plates and garnish with chopped fresh parsley. Serve immediately.
