Ingredients
  

  • 1 large head of cauliflower chopped into florets
  • 1/2 cup cream cheese softened
  • 1/2 cup sour cream
  • 1 1/2 cups sharp cheddar cheese shredded
  • 1/2 cup Parmesan cheese grated
  • 1/2 cup cooked bacon crumbled
  • 2 cloves garlic minced

Instructions
 

  • Cook the Cauliflower: Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for about 10-12 minutes, or until they are fork-tender. Drain well and return to the pot or a large mixing bowl.
  • Mash the Cauliflower: Using a potato masher or hand mixer, mash the cauliflower until smooth and creamy. For an extra creamy texture, you can add a little heavy cream at this point.
  • Mix in the Cream and Cheese: Add the cream cheese, sour cream, and half of the shredded cheddar cheese. Stir until well combined. Add the minced garlic, cooked bacon, Parmesan cheese, and season with salt and pepper to taste.
  • Assemble the Casserole: Preheat the oven to 375°F (190°C). Transfer the mashed cauliflower mixture into a 9x13-inch casserole dish, spreading it out evenly. Top with the remaining shredded cheddar cheese.
