  • Cook the Green Beans: Preheat your oven to 350°F (175°C). Bring a large pot of salted water to a boil. Add the green beans and cook for 3-4 minutes, just until they’re tender but still crisp. Drain and set aside.
  • Make the Sauce: In a medium saucepan, melt the butter over medium heat. Add the diced onion and garlic, and sauté for about 3 minutes until they’re soft and fragrant. Add the cream of mushroom soup, milk, and sour cream. Stir to combine and bring to a simmer. Cook for about 5 minutes, stirring occasionally, until the sauce thickens. Season with thyme, salt, and pepper to taste.
  • Combine the Green Beans and Sauce: In a large mixing bowl, combine the cooked green beans with the creamy mushroom sauce. Stir well to coat the beans evenly in the sauce.
  • Assemble the Casserole: Transfer the green bean mixture into a 9x13-inch baking dish. Spread it out evenly. Top with the crispy fried onions, making sure they’re evenly distributed on top of the casserole.
