Ingredients
  

  • Chicken
  • 4 boneless skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs beaten
  • 1 cup breadcrumbs preferably panko
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup olive oil
  • Garlic Parmesan Sauce
  • 4 cloves garlic minced
  • 2 tablespoons butter
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley optional, for garnish

Instructions
 

  • Preheat the Oven: Preheat your oven to 400°F (200°C).
  • Prepare the Chicken: Pat the chicken breasts dry with paper towels. Season with salt and black pepper.
  • Coat the Chicken:
  • Dredge each chicken breast in flour, shaking off any excess.
  • Dip into the beaten eggs, ensuring each piece is well-coated.
  • Finally, coat with the breadcrumb mixture, pressing lightly to adhere. The breadcrumb mixture should include breadcrumbs, grated parmesan cheese, garlic powder, dried oregano, salt, and black pepper.
  • Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 2-3 minutes on each side, until golden brown. Transfer the chicken to a baking dish.
  • Bake the Chicken: Place the seared chicken in the preheated oven and bake for 20-25 minutes, or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through.
  • Prepare the Garlic Parmesan Sauce:
  • In the same skillet, melt the butter over medium heat.
  • Add the minced garlic and cook for 1-2 minutes, until fragrant.
  • Stir in the heavy cream, bringing it to a gentle simmer.
  • Add the grated parmesan cheese, salt, and black pepper. Stir until the cheese is melted and the sauce is smooth.
  • Serve: Remove the chicken from the oven and spoon the garlic parmesan sauce over each breast. Garnish with chopped fresh parsley if desired.
