Make the Dough:
In a small bowl, mix warm water, sugar, and yeast. Let sit for 5 minutes until bubbly.
In a large bowl, combine flour and salt. Add the yeast mixture and olive oil. Mix until a dough forms.

Prepare the Fillings:
Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a bowl, combine mozzarella, ricotta (if using), and seasonings. Prepare your choice of meats and veggies.
Assemble the Calzones:
Divide the dough into 4 equal portions. Roll each into a circle about 8 inches in diameter.
Spread a thin layer of marinara sauce on one half of the circle, leaving a 1-inch border. Add cheese, meats, and veggies.
Fold the dough over the filling to form a half-moon. Pinch the edges to seal and crimp with a fork.
Bake the Calzones:
Place the calzones on the prepared baking sheet. Brush with egg wash and sprinkle with Parmesan and Italian seasoning.
Bake for 15-20 minutes or until golden brown and puffed.

Let cool for a few minutes before serving with extra marinara sauce for dipping.
