Ingredients
  

  • Chicken Bites
  • 1 lb chicken breast cut into bite-sized pieces
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil for frying
  • Cajun Seasoning if making your own
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon cayenne pepper adjust to taste
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions
 

  • Prepare the Chicken: In a large mixing bowl, combine the chicken pieces and buttermilk. Cover and refrigerate for at least 30 minutes to tenderize the chicken.
  • Seasoning Mix: In another mixing bowl, combine the flour, cornmeal, Cajun seasoning, garlic powder, onion powder, salt, and black pepper. Mix well.
  • Heat the Oil: In a deep fryer or large skillet, heat vegetable oil to 350°F (175°C).
  • Coat the Chicken: Remove the chicken from the buttermilk, allowing any excess to drip off. Dredge each piece in the flour mixture, pressing lightly to adhere the coating.
  • Fry the Chicken: Carefully place the coated chicken pieces into the hot oil in batches. Fry for about 4-5 minutes, or until golden brown and cooked through. Use a slotted spoon or tongs to remove the chicken from the oil and place on paper towels to drain excess oil.
