Ingredients

  • 2 garlic cloves minced
  • 1 packet taco seasoning
  • 1 cup cooked rice optional
  • 1/2 cup black beans or pinto beans optional
  • 1/2 cup shredded cheddar or Monterey Jack cheese
  • For the Queso Sauce:
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup milk
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup diced green chilies optional
  • Salt and pepper to taste
  • For Assembly:
  • Large flour tortillas
  • Additional shredded cheese
  • Optional toppings: diced tomatoes chopped cilantro, sour cream, salsa

Instructions
 

  • Prepare the Filling:
  • In a skillet over medium heat, cook the ground beef, breaking it into small pieces.
  • Add diced onion and garlic, cooking until softened.
  • Stir in taco seasoning and a splash of water (as per seasoning packet instructions).
  • Mix in cooked rice, beans, and shredded cheese. Set aside.
  • Make the Queso Sauce:
  • In a saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes until golden.
  • Slowly whisk in milk, letting the mixture thicken.
  • Add shredded cheese and stir until melted and smooth. Mix in green chilies if desired.
  • Assemble the Burritos:
  • Lay a tortilla flat and spoon the beef mixture onto the center. Drizzle some queso sauce on top.
  • Roll up the tortilla tightly, tucking in the sides as you go.
  • Warm and Finish:
  • Place burritos seam-side down in a greased skillet and heat for 1-2 minutes on each side for a crispy texture.
